Chardonnay

The most versatile grape of them all. It puts every inch of its native Burgundy into grace and elegance. The Chardonnay is a descendant of the family Noiriens. It descends in a straight line from the Pinot Noir, by combining it with an other older grape variety, the Goudais Blanc.
The Chardonnay has achieved worldwide success because it easily adapts to its environment. Therefore, it is not easy to summarize its expression in general terms. In its familiar Burgundy guise we can, depending on the production environment, distinguish three styles:

(1) the more complex Chablis with delicate notes of citrus, green apple, flint or acacia.

(2) the Côte de Beaune with intense and dominating aromas of white fruit, accompanied by floral notes and wood touches.

(3) the Côte Chalonnaise with mostly fresh fruits and dried fruits.
